Tangy Bacon & Egg Salad

Tangy Bacon & Egg Salad – perfect for breakfast, brunch or lunch! Enjoy 😎

INGREDIENTS
5 Large eggs, hard boiled
1/4 cup mayonnaise3 slices bacon
2 tablespoons rendered bacon fat
1/4 medium red onion
2 teaspoons Dijon Mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper

METHOD:
✔Slice bacon into thin slices and cook in pan on medium heat – cook longer if you want extra crispy
✔once bacon cooked place in paper towel but leave the bacon drippings in pan
✔ Hardboiled eggs – add bacon drippings, chopped onion, mayo and Dijon mustard
✔ Mix well and smashing eggs until desired consistency
✔ Add Cayenne pepper and black pepper – mix
✔ Add bacon – mix and fold
